Little Bit of This and a Little Bit of That…

A Little bit of this.  This week we made the grand adventure to the vet.  All three of the new little babes needed to have a little check up.  It was quite the morning.  Everyone left feeling extremely exhausted!

Now, for the little bit of that.  If you are in need of a really delicious meal that is easy, tasty, and comforting, then I have the perfect recipe for you.  I found it on the Do it Delicious Blog.  Chicken with Rice and Peas is the perfect one pot meal that is fresh, clean, and simple.  You can prepare it in a short time and then forget about it on the stove while it simmers for about an hour.  When I made this recipe I used a little more of all of the ingredients.  A couple more pieces of chicken,  a cup more of rice, and more chicken broth.  This I actually used a lot more of.  I doubled the amount of both of the liquids because the first time I made it my rice stayed a bit hard.  This was also because I was using a larger size pot. If you are going to increase your amount of rice, then be sure to increase your cooking time as well.  Oh, one other thing, for your non-pea lovers (in this case my Bri Baby) we spooned peas on the side rather than mixing them through with the rice and chicken.  Everyone in my family loves this dish and I certainly do because it really is great, your whole kitchen smells incredible and homey while it cooks, and you can have some extra lunches out of what is left over.  There is a great recipe on the Do It Delicious Blog of Jessica Seinfeld preparing this meal.  Be sure to check out some of her other videos.  Really great!

Chicken with Rice and Peas  (Recipe courtesy of Jessica Seinfeld)


8 small chicken thighs (about 2 pounds) 1 tablespoon olive oil1/2 teaspoon kosher salt¼ teaspoon freshly ground black pepper3 clovesgarlic, chopped1 teaspoongrated lemon zest (from 1 lemon)8 sprigs fresh thyme1 ½ cups brown rice2 cups low-sodium chicken broth1 cup water1 cup frozen peas, thawed1 lemon, quartereddirectionsWash and pat dry the chicken. Heat the oil in a large (5- to 6-quart) pot with a tight fitting lid. Season the chicken with the salt and pepper (¼ teaspoon salt & 6 turns on pepper mill per side). Add meat-side down and cook until browned, about 10 minutes; turn the chicken over and cook 2 minutes more. While the chicken cooks, prepare and measure the remaining ingredients.

Stir in the garlic and thyme and cook until fragrant, about 1 minute. Add the rice and stir to coat it evenly with the oil. Add the chicken broth, water, and lemon zest and bring to a boil. Cover the pot, reduce heat to low and simmer until the rice is tender, 45 to 50 minutes. Stir in the peas and cook until heated through, 2 to 3 minutes. Serve with the quartered lemon.
